- 2020 Cabernet Sauvignon: A classic interpretation of a moderate climate Cabernet Sauvignon, this 2020 vintage is an honest representation of the incredible vintage, showcasing a intense and layered nose, as well as a refined palate profile. The aromatics of cassis, blackberry, dark cherry, cocoa / dark chocolate, and vanilla dominate the initial nose, courtesy of two years in neutral 500L puncheons. Once deliberately oxidized, subtle herbal qualities shine through, in the form of cilantro and licorice, due to a slower, and cooler fermentation, with extended time on lees. Secondary aromatics of coffee bean and cloves round off a complex profile. The palate mirrors the nose, but focusses on black fruit and herbal notes, specifically mint and cedar. A subtle note of black plum lingers till the finish, which extends quite gracefully, rounded off with fine-grained smooth tannins, and vibrant acidity. Age this wine for 6-12 months before consuming, with total cellaring capacity sitting between 10-15 years.
- 2022 Chardonnay: An homage to Chablis, this vintage of Chardonnay was done exclusively in stainless steel, with zero oak intervention. The aromatic profile shows vibrant fruit, rooted in quince, starfruit, lime peel and white flower. Once warmed, a subtle note of pastry and brioche appears, due to extended time on lees (autolytic character). The palate mirrors the nose, but shows immense textural components, alongside vibrant acid and integrated secondary characteristics. Main notes of green apple, honey, lemon curd and Bartlett pear, with a hint of white peach and light apricot integrate with the grapefruit-like acid. The finish is sustained with a compact but layered back palate.
- 2022 Red: Ferox Red. Our honest and authentic representation of vineyard. Each vintage, the blend shifts, paying respect to what grew well in our vineyards, but also what balances the wine in every parameter. Introducing our 2022 Red, which is a conscientious blend of Merlot, Syrah and Malbec. Primary aromatics of raspberry, red cherry, plum, blueberry and graphite are evident, with a subtle note of bread dough and pastry once aerated, owing to long durations on fine lees. The palate mirrors the nose, with a focus on blackberry, black cherry, cinnamon and dried herbs. The tannins are well integrated and ripe, juxtaposed by balanced acidity.
- Vantage White: Vantage. A growing collection for Ferox, born out of the idea that multiple vintages and varieties can create a wine that is a true representation of time and place, and more importantly Ferox. Vantage White is a 2-part blend, consisting of Riesling (82%) and Chardonnay (18%) from 2022, 2023 and 2024. The primary aromatics are rooted in white peach, Barlett pear, rose water, cherry blossom and candied green apple. Once aerated, and deliberately oxidized, a subtle note of honey and mango appear, courtesy of cool fermentation techniques and choice of yeast. The palate mirrors the nose, with a focus on Ginger Gold apple, nectarine and pineapple, neatly packaged around bright acidity, and residual sugar to intensify palate profile.
- 2024 Rosé: A staple in the Elements Collection, and a style unique to Ferox. This vintage once again saw a co-pressing of Merlot and Malbec. Primary aromatics of this wine are consistent with confected strawberry, watermelon, candied banana, tart cherry, bubble gum and strawberry cream candy. A subtle note of sweet red pepper jelly becomes evident once the wine warms up, due to the compound pyrazine, found in higher concentrations in certain red fruit cultivars, and when managed correctly in the vineyard and winemaking stage, adds this charming complex flavour to the signature identity of Ferox’s rosé. The palate mirrors the nose, with a focus on strawberry, raspberry, red cherry and watermelon, with bright acid and a touch of sweetness that extends the clean and refreshing back palate.
- 2023 Riesling: Riesling – a grape that is versatile yet takes the characteristics of terroir and winemaking. This 2023 Riesling is focussed, with racy acid, and a touch of residual sugar to help balance the entire experience. Primary aromas are rooted in peach, ripened Meyer lemon, lychee, green apple and lime-peel. The palate mirrors the nose, with a focus on green apple, pineapple, lemon and underripe apricot. The acidity is lively to balance the residual sugar on mid-palate. The finish is lengthy, giving this wine the ability to be paired with food, without losing its intrinsic qualities.
